What is Gluten? 

Gluten is the protein in wheat and in wheat-family grains, such as barley or rye.

What is it used for?

Gluten is the "glue" that holds bread products together.  It is what makes dough chewy and elastic.



In food processing it can be used for:

  • Thickening/extending
  • Improving taste/texture

Who needs to eat gluten free?

  • people with Celiac Disease (an autoimmune disorder)
  • people with wheat/gluten allergies and intolerances
